The 2015 Mélange opens with ripe tropical fruit and coconut aromas, with hints of white flowers and chalk on the nose. The ripe, tropical fruit flavors are framed by a crisp mouthfeel and long, macadamia nut accented finish.
The Mélange is a blend of Chardonnay Clones 76 (48%), Robert Young 17 (46%), and 809 (6%). The fruit was harvested on September 11, 2015 at an average chemistry of 23.5 Brix, 3.30 pH, and 6.0 g/L TA.
The fruit was hand sorted before being whole cluster pressed directly into a blend of neutral French Oak (40%), Stainless Steel (40%), and new French Oak (20%). Native yeast was then coaxed into a long, cool fermentation to preserve the natural character of the vineyards terroir. No Malolactic fermentation was used in order to retain the crisp acidity and mineral character that come from this unique vineyard site. The wine was aged on lees and hand stirred once per week until being gently filtered and bottled after 5 months.
