Tasting Notes: Ripe black plum, cinnamon toast, and rose petal notes on the nose are followed by flavors of black fruit and spicy minerality. A generous, plush mouthfeel, lingering spice and round tannins frame the finish.
Romance Copy: The Plié 65, named after a ballet position in which the dancer’s knees are bent coincides with the shape of our Estate vineyard blocks 5 and 6 where the fruit, which is exclusively Dijon 115 was grown.
On a an early mid-September morning, we hand harvested and field sorted the perfectly ripe clusters and immediately delivered them to the winery where the fruit was again hand sorted, destemmed and placed in small bins to cold soak until fermentation began with the native yeast provided by nature in the vineyard. After a series of manual punch downs, the wine was pressed, settled and transferred to 100% French oak barrels for fifteen months where primary and ML fermentations were naturally completed.
