Tasting Notes: The nose shows fragrant rose petal, wet rock, and strawberry notes backed by hints of savory, smoky aromas. These elements follow through on the palate and are framed by spicy, gamey elements that fill out the long finish.
Romance Copy: The Écarté, named after a ballet movement meaning separated in which the dancer, facing diagonally toward the audience, extends one leg to the side with the arm of the same side raised above the head and the other arm extended to the side feet relates nicely to our highest elevation vineyard, which is perched on a northeast facing slope along the foothills above Jacksonville at nearly 2,000 feet.
The fruit for our Écarté Pinot noir, exclusively Pommard, was hand harvested and field sorted on a beautiful mid-September morning and delivered to the winery where the fruit was again hand sorted, destemmed and placed in small bins to cold soak until fermentation began with the native yeast provided by nature in the vineyard. After a series of manual punch downs, the wine was pressed, settled and transferred to 100% French oak barrels for fifteen months where primary and ML fermentations were naturally completed.
