The aromas and flavors are reminiscent of ripe black plum, framboise and sandalwood spice. Black tea and white pepper notes, a wisp of rosemary and a drop of maple syrup lift the aromatics. Subtle, spicy and toasty barrel notes emerge in the background, underscoring the judicious use of new French oak. A savory streak of fine herbs dances with the chorus of spices. The palate is generous; flavors fan broadly across the palate and are gently punctuated with fine tannins. Try pairing with grilled pork tenderloin medallions with a fresh tart plum sauce or simply with grilled, herbed lamb chops.
