Tasting Notes: The nose shows bright boysenberry, blueberry, and white pepper aromas with a hint of black tea. The spicy ripe fruit elements on the palate intertwine with the silky tannins, creamy texture and a long mineral finish.
Romance Copy: The forested foothills above Jacksonville provide the perfect setting for our three unique vineyards with varied elevations approaching 2000 feet. They are planted to seven clones, two of which are making an appearance in our 2013 Adagio.
The fruit was hand harvested and field sorted at the dawning of a cool September morning, and immediately delivered to the winery where the art of limited input winemaking was patiently performed. The perfectly ripe clusters were destemmed, sorted and placed in small bins to cold soak until fermentation began with indigenous yeast provided by nature in our vineyard. After a series of manual punch downs, the wine was pressed, settled and transferred to 100% French oak barrels for fifteen months where primary and ML fermentations were naturally completed.
