EXTREMELY LIMITED
Our Pas de Deux is made from a fusion of fruit from vines tended by two families of farmers, DANCIN Vineyards in the south and Durant Vineyards in the north, each committed to minimal input viticulture practices in two of Oregon’s unique growing regions, and is a blend of four distinct clones. The fruit was hand harvested, placed in our bins and promptly covered to protect the fruit and immediately transported to the winery where the clusters were hand sorted so that our winemaker could begin the art of limited input winemaking.
Fermentation began naturally by the native yeasts provided by the vineyard and our Chardonnay was aged sur lie (on the lees) for seven months in a blend of 100% French oak and stainless steel barrels. Bâttonage was carefully performed weekly. These old world, artisanal winemaking techniques add a dimension of creaminess, texture and complexity to the mouthfeel while maintaining the wonderful aromas and flavors of the fruit.
