Tasting Notes: The nose shows upfront pomegranate and blueberry notes backed by earthy aromas of forest floor and truffles. These elements are echoed on the palate, with smooth tannins that integrate well with crisp acidity and lingering finish.
Romance Copy: Contributing to the Septette are all seven of the Pinot noir clones planted on the estate. These include Dijon 114, 115, 667, 777 & 828 along with Wadenswil 2A and Pommard. The fruit, hand harvested and field sorted in three separate lots, was immediately delivered to the winery where the art of limited input winemaking was performed.
After a second hand sorting of the clusters was completed, the fruit was destemmed and placed in small bins to cold soak until fermentation began with the native yeast provided by nature in the vineyard. After a series of manual punch downs, the wine was pressed, settled and transferred to 100% French oak barrels for fourteen months where primary and ML fermentations were naturally completed.
